Show Us Your Life- Breakfast

My most favorite breakfasts usually include some kind of 'sweet'. I love savory as much as the next girl, too! When I get tired of the usual pancakes and French Toast, I love to whip up my favorite "Eggs In A Nest". This recipe is easy, and is also known by other names, but I like to keep it old school, and call it what my Grandma and Mom used to call it.

"Eggs In A Nest"

Ingredients:
Butter
Sliced Wheat Toast
2 Eggs
Strawberry Jam

1) Melt butter in frying pan

2) Butter one side of the wheat toast.

3) Take the center out of the piece of bread. You can use any cookie cutter of any shape. You can make it festive and fun! You just need to take out the center of the bread (so you can cook the egg inside)

4) Crack an egg and scramble in a bowl.

5) Once you have cut out the center of the piece of bread, place the piece of bread butter side up in the frying pan. Also put in the 'center' piece of the bread to cook.

6) Pour the scrambled egg into the center of the 'nest' of the bread.

7) Cook the bread and egg until the egg starts to bubble around the edges, and flip the bread over to cook the other side. It's okay if some of the egg spills over on to the bread- that's the best part!

8) Once the second side is browned and cooked, remove and spread Strawberry jam on the bread, and enjoy!

You can also cook the left over eggs and have scrambled eggs along side your "Eggs in a Nest"

PS: My most favorite restaurant in NYC for breakfast is The Clinton Street Baking Company. The blueberry pancakes are the BEST ever. I absolutely die for these pancakes! Amazing!!

I used to love this when I was little! Except I always called it an egg in a pocket. I still haven't been able to cook it just the way my mom used to. But hopefully, I'll eventually get it down!
